nothing, they are synonyms. some wineries may distinguish them for their own marketing purposes, but any wine that can be accurate labels as one can be labeled as the other. 

Hoodie is correct but for the wrong reasons. 

There is no difference between the two.  Robert Mondavi started the concept of Fume Blanc.  He had found an old barrel of Savignon Blanc that he had forgotten was there.  He had to find a way to sell it, so he labeled it a Fume Blanc.  While being in the barrel longer may have an affect on the taste and nuance of a red wine, it is barely noticable with a white wine. 

I learned this from my days as a waiter and bartender.
