From a sheer enjoyment of the game standpoint:

Bills/Giants
Giants/Pats
Titans/Rams
Patriots/Panthers
Broncos/Packers

All 5 of these games were relatively close all the way through and exciting to watch. 

From a coaching/offensive line standpoint
Bills/Giants - a smaller line but still good at power blocking
Bills/Washington - pure I-form/wheel and turn masterpieces
Broncos/Packers - The line that changed football by proving that smaller and lighter would dominate bigger and fatter.
Miami/Minnesota - Shula actually explained how they went through confusing the Purple People Eaters
