This thread title has been simmering in my brain for nearly a week, and I keep coming back to the idea that we probably shouldn't praise all of any profession just because it's a profession.
There are noble careers: firefighter, police officer, teacher, soldier, etc. -- but that doesn't mean every person doing those careers is noble. In fact, because these careers have so much power or influence, when there is malice or incompetence in the role, it's exacerbated.
